Cherry Energy Bars with Skinny & Co Coconut Oil
The weather is warming up and the great outdoors is begging to be explored! Need an idea for a perfect snack to pack while galavanting outside? Try these power-packed cherry energy bars! Not only are these bars filled with healthy fruits and seeds rich in antioxidants, they can also give you a much-needed boost of energy to complete all of your outdoor adventures.

Cherry Energy Bars Recipe
You’ll need a high-tech blender and a freezer to make these scrumptious bars. Recipe makes one 9 x 11 in. pan of bars
Dry Ingredients
- 3 c almond flour
- 1 c flaxseed flour
- 2 c oat flakes
Mix these dry ingredients in a large bowl. This will serve as your main bowl for all other steps. Next, take out your high speed blender.
Wet Ingredients
- ¼ c agave
- ¼ c maple syrup
- 3 tablespoons honey
- ¼ c flax oil
- ¼ c + 1 tablespoon lemon juice
- ¼ c orange juice
- 2 tablespoons vanilla extract
- 1 splash almond extract
- 1 ½ teaspoon salt
- 2 tablespoons Skinny & Co Coconut Oil
Mix together ingredients in a high speed blender until smooth. Pour blended liquid into main bowl and stir until mixture feels moist.
Fruit & Seed Filling
- ½ c tart cherries
- ½ c white raisins
- ½ c dates
- ½ c sunflower seeds
- ½ c apricots
- ½ c coconut flakes
- ¼ c sesame seeds
- 1 c pecans
Chop all ingredients by hand or use a food processor. Once chopped, pour fruit and seed mixture into the main bowl. Stir ingredients together until fruit and seed mixture is evenly distributed. Pour the main bowl into one 9 in. x 11 in. pan and firmly press mixture flat. Place in the freezer for about 30 mins. Cut bars into squares and enjoy on your next excursion in the great outdoors!
