Food For Fuel: Medjool Date and Cashew Protein Balls

Medjool Date and Cashew Protein Balls

Prep time: 30 mins

Refrigeration time: 4-6 hrs


1 cup cashew butter

1 cup rolled oats

11⁄2 teaspoons sea salt, we used Saltverk

11⁄2 cups shredded coconut

1 cup hemp seeds

4 tablespoons chia seeds

1 cup medjool dates

1 teaspoon cinnamon

1 cup crushed cashews

3 tablespoons maple syrup, we used Anderson's Pure Maple Syrup

2 oranges, zested straight into blender

6 tablespoons Skinny Coconut Oil, melted


  1. Using a high-speed blender or food processor, add the cashew butter, oats, hemp seeds, chia seeds, shredded coconut, dates, cinnamon, orange zest, and salt. Pulse until there are no large pieces of dates and the mixture resembles coarse sand.
  2. Add the coconut oil, maple syrup, and crushed cashews to the food processor. Continue to pulse until the mixture comes together into a sort of dough.
  3. Scoop the dough into balls, roll them in the extra coconut, and then refrigerate.
  4. Note: Store the energy balls in an air-tight container in refrigerator for up to a week.
