Food For Fuel: Party Pleaser Guacamole

Guacamole with pomegranate seeds

Ingredients

4 ripe avocados, halved, pitted, and scooped out
1⁄2 red onion, diced finely
1 jalapeño pepper, seeds and ribs removed, and diced finely
1 serrano pepper, seeds and ribs removed, and diced finely
3 green onions, thinly sliced
2 cloves garlic
4 tablespoons pomegranate seeds
3 tablespoons pumpkin seeds, toasted
1⁄4 teaspoon cumin, ground
1 tablespoon honey
3 tablespoons cilantro,
chopped
2 tablespoons whole cilantro
leaves
3 limes, juiced
1 lime, zested
2 plum tomatoes, cored,
seeded, and diced finely
2 tablespoons Skinny & Co Coconut Oil
Salt and pepper, to taste

Directions

In a medium mixing bowl, combine the diced onions, jalapeño pepper, serrano pepper, garlic, honey, cumin, lime juice, and lime zest. Season the ingredients with salt and pepper, and allow them to sit and marinate for 5-10 minutes.

Meanwhile, combine the plum tomatoes, cilantro leaves, pomegranate seeds, pumpkin seeds, and green onions in a separate bowl.

Warm the coconut oil just enough until it melts. After the 10 minutes of marinating time has passed, add the avocados, chopped cilantro, and coconut oil to the first bowl, and mix everything together with either a potato masher or a whisk. Adjust seasoning to your preferred taste. Place the guacamole in a serving dish, top with the crunchy bits from the second bowl, and serve immediately.
