How To Cut Half The Calories Of Rice With Skinny Coconut Oil

It seems counterintuitive, but researchers at the College of Chemical Sciences in Sri Lanka found that by adding coconut oil to rice cuts up to half of its calories.

For context, humans do not have the enzyme to digest part of the starch found in rice, which is a good thing because it means less calories while still leaving you feeling satisfied, but what if the percentage of undigestible starches could be increased? That's exactly what the researchers figured out how to do.

This cooking method involves cooking with coconut oil and then letting the rice cool before eating. That process fundamentally changes the structure of the rice granules so that they become less digestible, which means that fewer calories from the rice are absorbed by the body.

How to cut the calories in your rice by more than half

Add a teaspoon of coconut oil to boiling water, then add half a cup of rice. Simmer for 40 minutes or boil for 20 to 25 minutes. The cooked rice should then go into the refrigerator for 12 hours, which means you'll need to cook it ahead of time.

How does it work?

During the extended cooling process, as the rice starts to "gel," the amylose -- the starchy part of the rice -- leaves the granules. During the cooling period, hydrogen bonds are created between the the amylose and molecules outside the rice grains. This converts it into the starch the body is unable to digest, saving you calories while leaving you feeling full!
