Chocolate Coconut Almond Bars made with Skinny Coconut Oil
These guilt-free, chocolate coconut almond bars need to tasted to be believed! Anyone who has a bit of a sweet tooth knows how hard it is to choose a dessert that won't undo all of the day's healthy choices. These bars make the choice easy because they are raw, dairy-free, gluten-free, and super filling. The chocolate whipped together with Skinny Coconut Oil creates a truly velvety, decadent dessert.
Skinny & Co Chocolate Coconut Almond Bars Recipe
Cookie Base (Press into two 8x10 Pans)
- 1/2 cup + 4 tablespoons agave
- 6 tablespoons maple syrup
- 3 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 1 + 1/2 teaspoon salt
- 8-10 cups coarsely ground almonds
Pour ground almonds into a bowl. Add all other ingredients and mix with hands or spoon until ingredients feel moist. Using knuckles, press mixture into two, 8x10 pans.
Chocolate Top (Make Twice)
- 3/4 teaspoon salt
- 2 tablespoons vanilla extract
- 1/2 cup agave
- 1/2 cup honey
- 1 + 1/2 cup cocoa powder
- 1 cup + 1 tablespoon Skinny Coconut Oil
Pour all but the coconut oil into a blender and then blend until mixture pours freely. Add in Skinny Coconut Oil last and blend evenly.
Pour chocolate out of blender over almond base. Spread evenly with a spatula. Place in freezer, and chill for about 30 minutes. Cut into squares, and serve to friends and family!
If you start with whole almonds, you will need to blend the nuts in a high-tech blender for about 90 seconds.
